i recently purchased three of these cables which took me a really long time to find.

Not all cables are made the same and this is a better CAT 8 cable for connections using single solid copper conductors versus stranded copper conductors.

I remember seeing that one when I was searching for mine.

I did not buy it because I avoid the ones that do not show images of the inside of the cable.

Reading the details on yours I would say it is multi stranded copper instead of solid single copper.

That is why it can bend bend well without issues.

The problem is oxygen inbetween the gaps of your stranded cable can cause issues with your connection versus my solid cable will not cause those issues.

Think of the power lines in the walls of your home, they are solid copper not stranded.

how big a difference is it?

Not much if any unless you are having to do a long run. If say you are installing in walls a solid is what some prefer, if you are installing smaller lengths and need to have bends or flexibility then stranded is fine. 
As long as the cable is of good quality you are fine and yes there is blurb about skin effect and so on but I’ve only ever seen the Audio world talk about the purity of the copper and some of the costs of the cable is ridiculous. 
as for oxygen let me explain as I had an audio company and worked with cable manufactures. There is the slow but unstoppable degrading of copper over time ( oxidization ) even vacuum sealed cables will slowly degrade as the skin is porous on most products. You can get silver coated wires, yes the obscenely expensive cables but you will never notice the difference and is meant to prolong the cables life. 
 

So while stranded or solid has its pros and cons you could question the copper purity of said cables so you might as well just go for a well known brand and a cable that suits your needs ie shielding, spec for length and so on. 

Im U.K. and my mains circuit is stranded wire.
